In the snapshots and video rendering section of the manual it reads: "You can create high resolution renders at any point, watermarked with your logo and project information." I cannot see where in the software I can access this watermark function.

This is referring to the project information related features. You can define project information as well as an image in the Design tab for the project itself. This is then shown in the views and in renders.
