I'm working on a project where many of the fixtures are very close to each other, and at the moment the way the channels appear on the plan means there's a lot of overlap/it's a big mess. Is there a way of adjusting the channel location relative to the unit, its priority, its background colour, etc?

You can position each element of the symbol and data separately.
You can also use plot styles to change which annotations are shown on a plot.
